Ingredients for butter cookies:
140 g butter
140 g clarified butter
1 pinch of salt
20 ml orange liqueur
250 g powdered sugar
Preparation of the butter cookies
Bring butter and clarified butter to room temperature. Separate eggs, use egg whites otherwise. Wash the lemon with hot water, pull the zest off the peel and squeeze out the juice.
Mix butter and clarified butter with a hand mixer to a creamy white mass, add sugar and stir in. Gradually add the egg yolk, lemon zest, salt and liqueur and stir to a frothy mixture. Sift the flour over the mixture and knead thoroughly to form a homogeneous dough. Wrap in cling film and let rest in the refrigerator for 1 hour.
In the meantime, preheat the oven to 180 degrees. Cover the baking sheet with parchment paper. Roll out the dough 3-5 mm thick between 2 sheets, cut out the biscuits and place on the baking sheet. Bake in the preheated oven at 180 degrees on the middle rack for about 12 minutes, until the butter cookies turn a light golden brown color.
Take the finished butter biscuits out of the oven and let them cool down. Mix powdered sugar with 3-4 tablespoons of lemon juice. Brush the cooled butter biscuits thinly with the icing sugar and let them dry.
